Red Roy is a hybrid of sorts. An experimental brew melding some of our favourite dark styles: wee heavy, ruby mild and Flanders red. It’s a red ale with a twist. A winter sour if you will. Inspired by my old man (who loves a red ale) and two beers that changed the game for me: Sarah Hughes’ Ruby Mild and the Duchesse de Bourgogne.
The malt base is heavy on the oats and high on Midnight Wheat. The latter adds a well rounded sweetness when used at higher quantities, a lot of colour and very little bitterness. Then a modest Azacca and Challenger dry hop lifts the fruitiness to the fore. Tastes like tart jammy malty sweets. Yum!
