A brewery releasing a lager in the Summer with Oktoberfest around the corner is not unheard of. But it’s a proud first for Dookit Brewing. When first starting up the brewery a wise beery owl told me: ‘focus on the ales man’. Great advice, which I’ve followed through with. Now the limelight wanders over to the colder side. The long and low realm of fermentation where monitoring and patience is key. Where opinions vary and the history is rich. 

The challenge hasn’t been without its stresses but the result makes it all worthwhile. A pale and bitter lager has been brewed and stored cold for seven weeks. The water profile was untampered with as it is almost uncanny compared to Plzeň’s, the birth place of Pilsner: superbly soft, clean and sparse in its minerality.

Organic First Gold hops, the world’s first hedgerow hop, offer up a plush and spicy marmalade aroma and bitter the beer high to Germanic Pilsner levels. The base malt is Scotch Annat, a heritage barley variety grown over in Fife by @craftymaltsters. The fresh bread flavour and crispness is elevated by this beautiful native malt. I look forward to brewing with it again. 

As you can see the components in the beer are diverse but so is Glesga. Brilliantly so.
